wishing all of you Letterheads a wonderful Thankgiving. thought i would include a family recipe...
Southern Chicken and Dressing
pressure cook 4 boneless chicken breast. chop them up into small pieces. cook a large pan of cornbread in a cast iron skillet. chop up 1 large vidalia onion.
in large bowl crumble up all ingredients above. add 5 cups of chicken broth, 2 cans of condensed cream of chicken soup, teaspoon of poultry seasoning, teaspoon of black pepper, teaspoon of salt and one cup of milk. add more chicken broth to make the dressing moist as some liquid will cok off.
blend together and spread out into a large casserole dish.

Everyone thinks my pumpkin pie is the best they've ever had....the secret???
I just use the recipe on the back of the can of pumpkin, substitute dark brown sugar for the white, add a little bit of molasses and double, or triple all the spices! That's all there is to it!
Dad's stuffing is my favourite:
celery, onions, butter and salt, pepper and sage Bell's seasoning, chicken broth stale bread cubes,chopped apples, walnuts, raisins and orange. I throw in a handful of craisins too!
And a long time family tradition for us is whipped potatoes with parsnips!

Great post Mark. Happy Thanksgiving to you and all the other letterheads and families.
Below is a recipe that I picked up a couple years ago off the web. EXCELLENT COOKIES!
Enjoy!
(Recipe may be halved.)
2 cups butter 4 cups flour 2 tsp. soda 2 cups sugar 5 cups blended oatmeal** 24 oz. chocolate chips 2 cups brown sugar 1 tsp. salt 1 8 oz. Hershey Bar (grated) 4 eggs 2 tsp. baking powder 3 cups chopped nuts (your choice) 2 tsp. vanilla
** Measure oatmeal and blend in a blender to a fine powder. Cream the butter and both sugars. Add eggs and vanilla; mix together with flour, oatmeal, salt, baking powder, and soda. Add chocolate chips, Hershey Bar and nuts. Roll into balls and place two inches apart on a cookie sheet. Bake for 10 minutes at 375 degrees. Makes 112 cookies.

We were just laughing about the year the mice built a nest in the insulation of the oven...(we lived in the country at the time)by time we figured out what the smell was it was too late.
It was still a wonderful turkey day...we were thankful that year it wasn't a rat.
Ahhh...I love those Thanksgiving memories of holidays past!

Mark, I make my dressing like that except I use Mexican Cornbread recipe in my cast iron skillet but I leave out the cheddar cheese. And I use a little sage. My mother told me that was Arklatex dressing. Also I smoke a salt/sugar brine soaked Turkey. Bill Happy Thanksgiving Everyone!

Happy Thanksgiving to all. My wife makes Spinach Brownies every year at Thanksgiving. Anybody that gets up the nerve to try them love them (if you like spinach and cheese) I don't know what her recipe is. I think it came from a catering friend of hers or something like that.
