Working too late and have a stupid question: On channel letters, the "returns" are just the sides of the letters(as opposed to the face) right? Is the 90 degree bent trim that goes around the edge of the face/sides part of the returns or is it just plain "trim"

I hope I understand your question properly, A return edge in my vocabulary is the edge perpendicular to the "main" or front edge/face/surface. The returns are the pieces securing the face. This has been the standard terminology in the many illuminated signshops I've worked in but could well vary depending on locality I guess. HTH, David

The "returns" as they are referred to are in fact the sides of the letter. A channel(if lit thru a plex face) has both the side which are normally 3" wide attached to the back aluminum plate profile of the letter and the plex face with a plastic trimcap material for attachment.
Hope this helps.

In architecture, in general, any side that is perpendicular or even angled in relation to the viewing plane/face, whether it's a building feature or a feature of a smaller component of the building (such as a cast concrete facade with a groove in it) is a return.
So, you are right, and it's a pretty standardized term for that surface.
