For the last few years.....I have assumed the kitchen duty at home.After all..if a feller had a good woman who cooked for him and his family for over 20 years..doncha think she deserves a break?
Besides...the kitchen has become a brand new pallete..this is FUN!
Recipes for baking...creativity for cooking.After ya learn the ingredients,cooking the sky is the limit..
I got past the notion to use 50 spices at once..keep it simple when creating a dish.
I emailed a recipe for what we had for supper tonight to Ole Paint.......he likes veggie..I thought he would enjoy...this meal was so easy and so good,I want to share..
Try this recipe...
i promise you will love it.

Tortilla wrappers...I gotta git me a tortilla press.......
2 c flour
1 1/2 tsp baking powder
1 tbsp oil
3/4 c milk

mix above...add flavoring favorites....I used fine chopped spinach
try jalepenos herbs etc
knead for 2 -3 minutes
rest the dough for 15 minutes

meanwhile stirfry your fave veggies..
I used
1 red pepper
1 yellow pepper
1 green pepper
1/2 a vidalia....I eat these like apples.....mmmmmmm
lotsa mushrooms..
I added a few strips of chicken..you could easily omit meat and not
loose much
.I dont think you could put a wrong ingredient in here

Roll out tortillas..I used a ball of dough a lil bigger dan a gawf baw..

roll it thin..fry it(no oil) on a hot griddle or cast iron skillet till
it bubbles a bit...
then flip..dont cook too much or ya cant roll em cause they git brittle
Lay out wrappers and add a nice mound of cooked veggies.......and sprinkle a lot of your
favorite cheeses on ...then roll up and secure with a toofpick......
broil about 15 minutes..till browned.....
while they broil......
mix up a dippin sauce...I use all fat free...ya dont have ta
1/4 pkge cream cheese
1/4 cup mayonnaise
3 tbsp sour cream
2 tbsp pesto...lotsa garlic....splash water to thin...whisk till sorta smooth...

I had a lil dish a homade "nuclear" salsa as a condiment too...

to accompany...
a side of cottage cheese with chives
sliced ,peeled fresh cucumbers with fresh ground pepper....
Good company deserves good food..and vice versa....
