Cargo blanket here too, and sometimes old bedspreads.
Here's some protection you might not think about. INSURANCE! My insurance agent told me that signs in transit to a customers site requires a special rider. If the sign blows off your truck or worse yet you have an accident, you will eat the entire amount of the repair / replacement. My coverage costs all of $20 a year with a $100 deductable. That's the most peace of mind I've found for $20.

I use blankets inbetween signs, corex, and 4 big foam pieces. I also heard someone say they use the old vinyl cardboard rolls, and roll thier top sign right over the bottom sign. Sounds good to me!

I use coroplast off-cuts between 4x8's and I discovered that one person can load 4x8's into the van by using vinyl cores as rollers.
