Will gelatin support aluminum leaf on glass? I plan on reverse leaf then paint the entire background.

no it won't, plain and simple

you would be better off if you want to get a mirror finish on the glass to use 12K gold which is known as white gold. with this you can use gelatin but strengthen your solution slightly.
