I'm forever spelling these words wrong. If it is would not, shouldn't it be would'nt? Why is is it wouldn't? Wouldn't even looks spelled incorrectly to me no matter how many times I see it.

OK, Paul is right. I'll add another bit of English grammar:
An apostrophe is also used to show possessiveness, never to show plurality. An exception to the possessive use is with the word "it". "Its" is possessive, "it's" is a contraction for "it is". The apostrophe takes the place of the "i" in "is".
