At my age it's kinda hard to do this "dream" stuff but anyways here goes.
1. professional dirt late model driver ( this one is doable, Freddy Smith is my age )

Troy, I really have to wonder about your choice on number five though. I was an aircraft fire fighter, albeit , on a helicopter carrier, not the most glamerous job in the world on a daily basis, that's for sure. Of course the potential for life threatening situations is always there.We didn't have to worry about all the arms that are about a CVA on our ship, we never carried any gunships and the method of fighting a fire on a helicopter at the time was to shove it overbord ( there loaded with magnesium, which is next to impossible to extinguish ) I'd suggest you go watch some films of the Forrestal fire, you might want to rethink choice number five.

The Vintage Weekend at Watkins Glen is featuring Corvettes this September!

I would like to own me a little restaurant on northern gulf coast fla or somewhere the like, that i can get up, put on my flip flops, shorts, leave shirt unbuttoned, go out and water the flower (cactus maybe) garden. Go into work around noon to see that things are going ok.. eat me some of my good food. Take care of some business, have dinner with my little girl that evening and then listen to some nice band playing some good sounding tunes.
That would be heaven to me.
Hmmmm..... Odd how theres not a companion in this story... lol... i guess im going to have to work on that one... heh. That would definitely make thing all the better if I could do the above and have someone to share it with that wanted same.

I would own a coffee shop that sold only cheesecakes for food and out back would be a studio for bands to practice/record in. That way I would have my days AND evenings covered. My wife makes AWESOME cheesecake and I love to sip coffee while playing my gee-tar.

Well, I've been pondering this one for a few days....
Part owner of a Micro Brew Pub,(NO factory beer allowed, only "our" taps, and a revolving "visitors" tap, for funly variety)
This Pub would have a studio attached(tenuously) where I would create "Flying Biscuit" Quality signs, real & imagined.
I would be sponsored by a cool bike company, doing the bike festival/race circuit, as a proponent of "healthy fun on a bike means a healthy life, full of fun(and sometimes, fractures!!)
Oh yeah, I would put in regular/irregular shifts in the kitchen at the Pub, serving up the kinds of foods I love to make and eat.
OK, so this is a long ramble, all I know how to do, lol! Basically, it boils down to:
Paint Signs that I want to.
Ride Bikes.
Make food I like, and others hopefully will to.
Help create Great Brews that I like & others will to.
All this takes place with my great wife, Lyn,(doing her thing) and lotsa visiting Letterheads, BikeHeads, MicroHeads passing by.
Oh hell, What a business plan this is gonna be!

A dream job for me would be to own a camp with cabins and camping areas...open it up to any and all musicians...make it a songwriters camp, with a recording studio........maybe have some festivals there a couple of times a year.... have a dining hall with a chef, nature trails, swimming.Get John Deaton to make some signs.....
Second choice would be a medical career (Paramedic), followed by songwriter,sign inspector(boy could I have fun with THAT one!), or maybe just be a full-time grandpa, get paid by the hug.

Give me the easy life. I want to be a derelict! I would move down the Tangipahoa River back to my old camp which was 9 miles by boat from the landing.
I would hunt, fish, crab, and shrimp for food. I would use my food stamps at a crooked grocer to buy my beer. The welfare check should cover the light bill, my cell phone, and gas for my boat.
If I were to get sick or need a dentist Medicaid would give me much better care than afforded by those who are on insurance plans at work.
Oh yes, I could also collect a little extra check because it wouldn't be too difficult to proove I'm a little "OFF".

This is a hard one,
If I knew what I wanted to do (when I grow up) Then I'd be obligated to go off an do it.
I enjoy building things more than anything else so, I think I'd like a self cleaning shop full of metal and woodworking tools that would put themselves away. I'd have an unlimited supply of metal and other parts to fabricate hotrods or rebuild bikes. If I decided to build a catapult no problem, the only decision is how big.
Also, I wouldn't have to mow grass or plow snow or cut firewood anymore. A steady temperature of 60 degrees would be nice too. I'd just putter around in my shop and talk to my dog for company.

Anybody who wrote Gourmet Chef had better change that to Celebrity Chef so you can be the kind who drops by once in a while and cooks rather than the 12-14 hours a day a regular chef works. That's why I changed my mind about becoming one - the hours suck!
Oh yea, my dream job - Bestselling Novelist. I'd like the satisfaction of having a well-written novel and have the fame without getting recognized.

I grew up calling what most call 'supper' = 'dinner'. Heh, lunch is at noonish... dinner/supper is later in the day.
I have been corrected on that many times.. haha as well as for some of my other slang terms that I got from being raised in the hills and mountains of Tennessee.
I just know that I DON'T like the cold here in Iowa, much less if it were worse somewhere else. Heh, but sometimes you gotta do what you gotta do .
And yeah, I love good food, but agree that to be head chef... ack... no way and no dish washing here.

Your other post reminded me ... when I used to live a few towns over there was this plaza on the corner of Buffalo Rd. and Union St. I thought it would be cool to open a cigar/liquor store there called Buffalo Union Smoke & Spirit ... had a logo in my head with a ritzy, monical wearing, cane carrying type buffalo
