I have lettered several of these soft side trailers. In my case they have been vinyl sides. Are the ones you refer to really canvas or vinyl?
If they are vinyl I feel that the only way this can successfully be done is with vinyl screen ink. I use Naz-Dar VF series ink and thinners. It can be thinned to a consistency that can be brushed or rolled. I do a lot of work for the local awning company and use this on vinyl awning lettering jobs as well.

The inks will get you as high as a Kite, so make sure you have the right ventilation as your doing the job!
I've tried "vinyl banner paints" but they eventually start cracking off especially with the folding and pressure cleaning.
If you can get the sides before they are installed all the better. Its easier to do them flat as you can really thin the ink out and it will "bite" better.
White on Blue? I get best coverage results by cutting vinyl masks and spraying thin coats white ink ... its going to take at least two or three.
You can put a drop of black in the white to increase your coverage. Although the ink will appear "light grey" it will look "white" on the blue background . Test first
