OK, So you've worked all day and now its time for that evening meal made for one.
WHAT DO YOU COOK?!!!!
Come on folks.....give me some ideas for food for the single person.

Mark, can I come over to your house for supper?
One of my smelly ol' bachalor friends recommends taking a can of tuna, mixing with salsa and cottage cheese and dipping crackers into it along with a few beers!
Or taking the noodles out of a package of raman noodles, cooking and mixing with a can of chili, eat with crackers along with a few beers.......hmmmmmm......I think this guy would eat anything with a few beers!!!!

I'm lucky (I think) I have a McDonald's, Wendy's, Taco Bell, Pizza Hut, Dairy Queen, and Burger King all within 4 or 5 blocks of my shop.

I'm not single anymore but sometimes I get home later than dinner, so I'm on my own.

Here's one of my favorites..a big hit at parties too...

One jar of Chi-Chi's hot salsa...
One can of hot Hormel chili without beans...
As much Velveta cheese as you want...

Microwave on medium for about a minute or two...

Eat it right out of the bowl with Saltines or your favorite nacho chips.

Put it in a small crock pot for parties - lasts all night.

GREAT with beer...but no Grain Belt down here

What ever happened with the Letterhead cook book? Did I miss it?

Hahahahahah, welcome to world of the singles. Cooking is not my favorite either, but here's a meal for you that can be made in less than 20 minutes. here's what you need...1 pack of corn tortillas, cooking oil, 1 can GreenGiant Mexi-Corn, monterey jack cheese, a few jalapenos, cilantro, lettuce, lemon, a few firm tomatoes, 1 lb hamburger meat, (less fat better) long grain rice, 6-pack of your favorite beer, tomato sauce, tongs, (to flip the tacos, no tongs, spatula will work), pull out two frying pans 10" preferably. If you have teflon even better. first frying pan add some cooking oil maybe an 1/8 in or so. Pop a beer open, have a zip. now with some fire or if you have electric stove maybe medium heat. add some long grain rice, maybe fill it a half inch high or so. stir the rice, what you want to do is toast the rice slightly. sort of golden brown but not burned. Now add some water almost to the top, add in some salt, pepper, I always add some garlic powder. after it starts to boil. put a lid on it. Have another zip, about 10 minutes into the boiling add a can of tomato sauce, and the "Mexi-Corn" stir it around. let it set, put the lid back on. in about 10 more minutes it should be done. Now while that is cooking. Heat up some corn tortillas, flip them so it they are warm on both sides. add in your hamburger meat, add in your favorite meat spices. fold the tortilla, smashing the meat into the tortilla so in like a half round. with the cooking oil maybe around 3/8's of an inch or so getting warm in the other frying pan, you can make 3 maybe four to fit in that pan. add the tacos in, with medium heat, put a lid on it to cause you will get some splatter from the oil, have another zip. Flip the tacos about every 2-3 minutes what you want is to toast the tortillas, and your cooking the hamburger meat at the same time, after a few minutes open up one of the shells of the tortilla and check to see if the meat is cooked. when it is, get a big bowl add some paper towels, now set the tacos in the bowl so tilting downwards so the oil drain out. I have a salsa maker, I never use store bought salsa to much additives and garbage, but another way is to dice up jalapenos,(warning "do not rub your eyes" for any reason at this time chili burns) tomatoes, some cilantro, or lettuce, and thin slices of chesse. a little squeeze of lemon. Now get your plate, add in your already cooked rice, your tacos. Whala! might seem like a lot of work, but it isn't, and after you get it down, you invite a lady over, have some wine or beer, couple candles, some Roger Smith music, or some smooth jazz, women love to see a man cook. But a little secret, don't let them know you know how to cook to many dishes or they will try to have your ass cooking all the time. hasta la vista and good luck amigo....Cisco

I love to cook just ask Jerry Mathel, he was here for Thanksgiving He never goes to the places he mentioned, only eats at the Lantern, a home cooked place with a hungarian-German lady cook, beakfast lunch and dinner.

In the winter I hibernate and make stews, seafood n'clam bisques, chicken n'dumplings all kinds of food.
Check around inside the house for recipe books, get out the pots n'pans, buy butter.

Eat less store bought red meat, ask your hunter friends for venison, make stews.
If you drink alcohol, change to a nice full bodied wine don't go overboard.

Change your life for the better and don't look back..........

take 2 pounds of souse meat, 3 cans of redbird vienna sausages, 3 cans of sardines,
2 cups of bacon grease, a large chicken neck,
blend together in a large bowl.

then take that crap and throw it in the trash and head to mcdonalds for a big mac!

And Hey Joey!.... Don't be telling everybody about me and the Hungarian-German Lady Cook!!!! By the way, you really missed out on the other evening when she fixed roast beef rolled in red cabbage, with potato cake (I think she called it kugel?) and a mushroom gravy.

When I was single and wasn't doin much for supper, I'd either hit the buffet at a local upscale strip joint or 9 out of 10 times I'd get a bite and hit the beach. I don't recommend that to everyone. It's tough being me.

Terry, glad you know how to cook, for awhile thought you was one of them dudes who never learned. don't worry I know a couple of dudes who don't. Had one partner come over I had a bunch of things to do it was morning time and he was saying man I sure am hungry, well so was I, so I told him go ahead and fix yourself something, throw some potatoes, bacon and stuff, Ah man big mistake! he used a metal spatula on my new teflon pans. I asked him I thought you knew how to cook. he said he never learned, ah well.

Hey Mark, I went and bought all them things for your recipe, hey man I want my money back! I was trying to impress a lady with that dish, told her I got it off the internet, I was braggin about man, she said "ooooou" after the meal was cooked, she took one bite, spit it out! went outside gave it to the dog, he looked at it, smelled it. he fell down bro and crawled away with his nose draggin in the other direction makin funny noises. I never tasted it but it did smell a little funny. Tell you what man send me that hat and well call it even.

Hi Terry,

In regards to single servings for food, buy lots of freezer bags, small medium and large. Whatever meat products you buy, divide them up and freeze them in the freezer bags.

If you make casseroles, or meatballs, or whatever, make more than for one meal, then again, freeze the rest in a portion you can eat in one sitting. This will save you tons of daily cooking.

No matter how many I cook for, if something needs strange ingredients, or takes too long to prepare, I don't make it.

The quickest dinner? Free range eggs, hash browns, multigrain toast, chopped up cantelope and freshly ground coffee. FAST, EASY and good.

Ok Terry, here's a quick & easy one guaranteed to fill you up, and is nice for a "Sunday Brunch" as well.

A Monte Cristo Sandwich is made with 2 slices of bread...your choice as to what type, 2 fresh eggs, a slice of swiss or Greyre cheese, a bit of milk, tobassco sauce, and celery salt, plus a couple of slices of cooked ham.


In a wide flat bowl, beat the eggs, add milk, a couple of drops of tobassco, pinch of celery salt, until the egg mixture is mixed to the consistancy required to make scrambled eggs.
Now, heat some cooking oil in a frying pan ( just barely enough to cover the botton...less if you're using teflon pan). Dip the bread in the egg mixture, and turn over the slice so that both sides are coated. Place the slice into the frying pan, and repeat with the 2nd slice of bread. Heat those slices, and flip over when the underside is a nice golden brown. Now, place the sliced ham and swiss cheese on top of the "browned surface" and allow the ham & cheese to heat and melt between the bread, as the 2nd side browns up. It's sort of like making French Toast, but with the ham & cheese filling, it's quite tasty and quick to do. The ingredients can also be switched around a bit to suit your tastes...eg: sliced roast beef with a mayo/horseradish topping, or roast beef & process cheese slice.

PS: I was gonna give you my Sardine & Marichino Cherry with mustard recipe, but I didn't think that it would go well with grits.
